Why do people insist on making a roux or bechamel sauce for mac and cheese?

I found a basic cheese sauce in a classic french cook book that was basically just milk, cream, cheese, and cornstarch with some water. Came out perfect consistency for mac and cheese, and when I baked it, it didn't turn into this dried out clumped mess. It was still saucy.
