-Salumi is the Italian word for all cured meats and not just of pork.
-Salami is greasy pork sausage saturated with spices (to hide the poor quality of the meat), crapped out by American style factories.
-Chorizo, Fuet and fennel flavoured salumi are predecessors of the American system. Poor people didn't throw away meat that went bad, they just drowned the bad taste/health risks with strong/healthy spices. Most chorizo, fuet etc is absolute bottom tier to this day.
