Imagine tasting a lightly roasted Ethiopian single-origin coffee for the first time, then complaining that it's shit because it's not "properly processed" by overroasting it, cutting it with robusta and spray-drying it into instant coffee. What you are tasting in ruby chocolate is some of the character of the raw cocoa bean, which you dislike because the actual flavor of cocoa is alien to you because you've been eating shitty mass produced chocolate your whole life which has been processed to the point where nothing of the original character remains.

I've just come to the conclusion that over time many of the things I enjoy will be considered soy by one or two faggots. The classic Greek salad is the Citizen Kane of salads. It has all of the necessary elements for a great salad with nothing unnecessary: freshness and texture from the cucumber, sweetness from the tomato, richness from the olive, saltiness and umami from the feta, pungency from the onion and the subtle aromas of oregano and extra virgin olive oil as a finishing touch. There is nothing you could add to a Greek salad to make it better, nor is there anything that you could take away. Only someone who's only ever had an americanized "Greek" salad with lettuce, cow's milk "feta" and disgusting faux balsamic vinegar could show disrespect to the noble χωριάτιkη.
