Mercer has overtaken Victorinox in my mind, Victorinox has crept way up in price.

Mercer has comparable knives to the fibrox for less than half the price, and their knives which are the same price as the fibrox are way better made

Shuns are nice but are notoriously easy to chip, i would only get one if you had other knives to handle rougher tasks.

Wusthof and henkles are equal in quality and style imo, but as others have said, dont get anything with a full bolster.

All of these knives are poor value for money though.

If you want a japanese style blade, look at Tojiro's. If you want a german style blade look at Mercers, exact same steel, style and quality without paying for the name (pic related)

Tell us what exactly you're looking for and we might be able to point you in the right direction. Because at the moment it seems like you settled on a price point and picked a few popular names

Anyone have any experience with this bad boy? Just ordered it, ive been after a german style chef knife for a while but couldnt justify the price of a wusthof or henkles.
