Hate to be the "It needs to be genuine Italian to be good" guy, but if you spend a little bit more money on some quality Olive oil you will taste the difference.
You pay for what you get, some Evo is better for cooking, and some are better for "finishing" or plating. The quality kinds are what you want to have with your caprese salad or your bread. You most certainly cant replace that with any other oil and have the same taste.

I almost never cook with regular olive oil though, usually pure oliva or grapeseed.
