Pizza dough thread

I have one of these standalone small pizza ovens. It's called a pizza dragon. However, I can never make the kind of pizza I really want. I wanna clone the pizzeria kind. I want it with a chewy crust, resembling the store bought bread crusts.

How can I get this chewy pizza pizza crust?

Any tips? Does pizzerias add a lot of gluten?

Also, what mix of cheese is best for cloning the new york style, greasy cheese?

I already use the tip0 pizza flour.
