You want to sift the beans out of the shit of a civet.

one large onion, diced, in a pot with 2 tbsp olive oil and about a tbsp of salt.
a couple stalks of diced celery is optional.

cook on low for about 30 minutes, it will turn a translucent golden brown.

add 28 oz diced tomatoes preferably san marzano style. Add 6 ounces of tomato paste. mix.

add 1.5 tbsp white sugar, 2 tsp parsley, 1 tsp oregano, 1 tsp basil, 1 tsp black pepper, and a teaspoon of vinegar or pickle brine.

add some water if it's too think and cook it on very low heat for 4-8 hours.
