Small dense pancakes, also known as American pancakes are sickly as fuck. I can't stand the things.

Much prefer English pancakes which are similar to French crepes.

Here is what you do OP.

At least, this is how I make my pancakes, american ones are more fluffier and "airy".

Break 2 or as many as you want eggs into jug
add a generous splash of milk, then add flour until you get a batter consistency that isnt "runny" anymore, you can thicken it up with more flour, but it needs to be pourable.

get your pan hot and add in some butter/oil, whenm you think its hot enough either dip a fork into the batter then run the fork along the pan so the batter residue that stays on the fork sizzles nicely, otherwise its not hot enough. If your batter doesn't stay on the fork long enough for you to do this its probably not thick enough.

I don't know about you but my pancakes when I pour them out cover the entire surface of the pan so they are always a circle, but the batter should be thick enough that it doesn't pour out into any strange shape as soon as it hits the hot pan anyway.

flip when its not runny on the top, add sugar and lemon juice over the top when you roll it into a crepe shape in the plate.

I'm curious how "american pancakes" are made, pic related, what I consider a pancake.
