I enjoy fish steaks too. But the reason Americans don't cook fish whole is because we don't want to know where our food comes from. We just want to shovel whatever tastes good into our mouths and not have to worry about the process it took to create it. It would be bad for business 20 years from now if little children became traumatized by seeing a pig's head at the dinner table.
