I believe the chicharron is basically deep fried which makes the meat form a crust that can be a little tough on the less meat parts but overall is crunchy on the outside yet juicy and tender on the inside. Hard to describe

They have napolitos as a cooked taco filling. Never tried it because the meats are just too tempting but I'll go for it next time. Squash flower sound interesting, will look for that as well

The small mom and pop restaurants are the best, but there is also a Michoacana grocery store right around the corner from my house and they have an amazing taqueria inside. Al pastor, lengua, chicharron, nopalitos, tripas...it's the best
