When a purchase is finalized you have to sign either a paper or electronic receipt, and on that receipt there's a field to add a tip to your total. Pic related is a basic template for a bar receipt. If you close out the tab for every drink they have to print this receipt and have you sign it every time. They do it for security reasons; if the transaction is wrongfully disputed they can show a record of your signature to prove you authorized the transaction. So if you let them leave the tab open, you only get 1 receipt to sign before you leave.
