I usually pour some of the fat rendered out of my meat into my rice.

Vigo yellow rice is pretty tasty without any added animal products though

The southern US way is to season the water with a lot of salt and add a little butter. Damn, I could go for some cube steak and pan gravy over buttered rice right now.
