So today I went and tried soul food in a black restaurant, under the recommendation of my black friends. They hyped it up and said it would more aromatic, flavorful and hot that any "wypipo shit" Ive tasted before.

I was left disappointed. I could only taste a few spices in most of the dishes(jambalaya and fried catfish for example) while some like the steamed collard greens and chitlins had no spice at all.

The spiciness and aroma was nothing compared to the one found in indian and my country's dishes(Im iranian). I later found out that blacks use mainly just cayenne pepper, garlic, salt, black pepper and pour lots of lousiana hot sauce. While hot, this is very little variety compared to other cuisines that focus on spices. Where is the cumin, fenugreek, tarragon, turmeric, coriander, nutmeg, aniseed, etc?
