I like a mango based sauce with pork.
Fry the chops and remove to a warm oven to rest. Deglaze pan with some water and a dash of white balsamic vinegar or verjuice. Add the chopped flesh of one large mango per 2 chops and sauté until it starts to break down. Return pork to pan for 45-60 seconds per side and serve with the sauce spooned over.
