It is probably like rice. Whole rice is way cheaper to make since you don't need to polish it, but due to the majority of people preferring white rice, it ends up being more expensive because of demand.

I asked three different nutritionists on different occasions and all of them said frozen fruits and vegetables don't lose much of their nutritional value. One of them just told me not to leave them too long frozen.
