They stack up layers of meat like this, then do something with it, I think wrap it up in like a tight-sitting film which makes the sides so even compared to the pic

As for the sauce, I'm not quite sure what it is, but it's some kind of yoghurt mixed with spicery, and it usually tastes sweet
