Cows.
Not to eat as meat but for their milk and more importantly their manure.
The manure feeds their crops which makes whatever crops they grow more nutrient dense than western crops that use artificial fertilizer.

Also they have a weird caste system and certain castes will abstain from meat for religious reasons. Other castes may not eat much meat because they simply cannot afford it.

But idk, I'm just a whitey who asks a lot of questions. I would ask someone who actually lives in India. Keep in mind India is a densely populated, massive country with multiple cultures, religions, and regions. So what one person might say could be completely different than someone else. It would be like trying to figure out American food culture but you ask a tech addicted consumer urban soifag from San Francisco, what they might say will differ from an obese inbred backwoods redneck in rural Alabama.

Legit. And with dairy too. Well sourced dairy can be very ethical. There is no law that says you have to remove the baby from the mother, and the manure that cattle produce creates incredible crops. There is a reason the hare krishnas worship the cow. Cattle, even in nature, will often produce more milk than their calf needs, since they are herd animals and calves being orphaned or abandoned is not uncommon. Humans can actually benefit the calves too, since sometimes calves that don't belong to the mother will sometimes crowd her and not allow the cows own calf to drink, a human can ensure there is milk for all. I have seen people who get so much colostrum from the cow. Like enough colostrum for the calf, some extra for another calf if in the future if there are any issues, and even still more colostrum for the human. And this is with a HERITAGE cow, which is not bred to produce like the industrial cows.
