Eggs poached in vinegar-water on toast, always reminds me of my mother, it was what she'd make me if I was feeling ill or if I just couldn't decide on what I wanted for dinner, or as I got older if I was hungover. I remember she'd always give me separate plates for the toast and the eggs because I didn't like the water making the toast soggy - I'd always put one egg on toast and eat the white but leave the yolk, and eat the white of the other without putting it on toast, and then I'd break both yolks on the remaining piece of toast and spread it all across it.

I still make it every now and then, it's simple, it just doesn't taste the same as when she was alive.
