Practice marinating flank steak and try different marinades to see which ones he likes best. Basic marinade like 1/4th cup worcestershire sauce and half a lemon per pound of meat is used at our family cookouts.

Make sure to cut the steaks against the grain of the meat for tacos for easier chewing and make the tortillas yourself (store bought ones taste like bread with pesticide). Good luck hun, you're husband is very lucky to have such a dedicated wife like you.
