As someone who absolutely loves German food, most European food isn't particularly "interesting", so it's a hard sell compared to heavily spiced "fun" foods like Mexican or Chinese. It's simply not very marketable.

Additionally, white immigrants are typically seeking more skilled labor and aren't immediately relegated to food service.

On the bright side, I know of a few German, Polish, French, and Portuguese places in Houston, but that's only because we are absolutely chock full of immigrants here.
