I imagine it's similar to cooking with lard.

Only thing I can think of is that most lard is processed a bit more than OP, so the tallow may not have as high of a smoke point.

Animal fats are bitchin'.

I find a mixture of lard and butter results in the best flavor.

Just use it as you would any other oil or fat. Buy some cheap lard if you don't want to risk ruining some of that tallow.
