Tonkotsu ramen is the my favorite dish I have ever had. Only about 3 places out of like 40 that I went to made it really well though. I was 25 when I moved to Japan, but as soon as I had good tonkotsu ramen, it became my instant comfort food. I miss it every day now that I'm back in the states.

I'm in Japan right now. Not sure if I'm spelling this correctly but, Tonkotsu ramen is the best I've ever had. Pork based broth that's a bit fatty. It's delicious.

Learn how to make it, and you'll probably get more customers than fish based ramen. Especially if you're in the U.S.
