Light roasts give more flavor from the bean than from the roast alone. Medium is a good mix of the two, and dark roasts are almost all just the roast and none of the bean. I've had some really great light roasts and some hot brown water, so it seriously depends on the quality of the bean. All this being said I prefer a medium roast.
