I see potatoes and big slices of pepper floating in that thin water. That shit is a fucking soup. It's not what we consider authentic chili nor chili con carne.

There should be beans in most chili. If you're looking to make a particular style that's just a spicy potroast, which should just be called texas potroast or braised beef, then no beans.

A shit ton of onions (2-3) minced to the point where it will break down, same with a bunch of poblano and serrano peppers, a can of chipotle peppers, a 28 oz can of san marzano plum tomatoes that I chop up, a couple tablespoons of cocoa powder, and a few lbs of beef short rib (that's right short rib fucker) cut into just under 2 inch cubes.

It's done when #7 lead sinker floats on top.

A lot of it probably has to do with the rising cost of meat vs poor pay/hours, and retarded older generations that don't consume enough vegetables dying off in America/Canada.
