I'll add a little extra onto this. Scotch cannot be made with new barrels, they have to be used. The go to would be barrels out of Spain/France/Portugal used to make wine and other stuff.

Except the demand for whisky is up and the barrels are not only not coming in as fast, but I've read it's slowing down due to a multitude of issues in the EU. So companies started getting ex bourbon barrels given theres a ton of them laying around in the US cause bourbon makers cant use em. Some scotch purists hate this so they source the barrels from smaller places for that sherry/madeira/whatever flavour they want to stick to. Or you be like Macallan where they just make a company that makes and sells barrels to wine companies on the guarantee that they get the barrels back afterwards.

I'm no scotch expert, I just drink what I like. And when you have a 12 year Macallan sherry cask or a Double Oak cask, I find myself liking the 12 year Macallan double oak way more now.

I guess it was a little masturbatory at parts, but the idea of dedicating yourself wholly to perfecting your art is pretty fuckin admirable. Also dat cinematography. I don't even like sushi and I think this is textbook perfection for a documentary.
