I used to work at McDonald's and the burger cheese was markedly different from Kraft singles. Kraft singles are more like congealed cheese sauce, while these were actual slices that could be peeled from eachother like any presliced cheese. They did melt easier than regular cheese, so I guess there's some sodium citrate and extra moisture in there, just way less than in Kraft singles.
