I've BEEN eating healthier, under the premise of "mostly-paleo". Tonight was baked fish with lemon, bacon-wrapped scallops and asparagus on the grill, roasted potatoes and a pinenut & mushroom risotto. (Family dinner; I didn't cook all that just for myself.)

That said, there are days when I just want a cheeseburger more than anything (every couple of months or so). So I go and have one. :)

Peter Luger's gonna be way more expensive though. I don't think OP would debate that the meat would be better meat.

Then again, I've been to Luger's 4 times and gotten the double porterhouse twice, the ribeye once and the double fillet once. All were melt-in-your-mouth glorious pieces of steak, all easily in the top 10 meals of all time. They're not known for their burger, if they don't bake their buns (or buy good buns) or choose appropriate toppings, it might be sub-par.

Does /ck/ think filet mignon is an over-rated cut of meat? I've had it a few times before and I wasn't impressed with the taste vs the price tag. I've had ribeyes that turned out just as tender and more flavorful. Maybe I just haven't had the right one, but it seems like other cuts taste just as good, if not better, with a cheaper price tag.

What cut of steak do you guys prefer?

Let the steak come to room temperature, this way the inside will warm up to a delicious vagina pink and the outside will be seared. 2-3 minutes on each side.

But 30 secs on each side and then a few minutes on both sides in 350F oven is more reliable.

Pic related, properly looked steak color. None of that raw center burnt crust shit.

I don't know, I haven't had well done steak in many years.

No, none of those steaks are properly cooked except for blue rare, which is too gelatinous for me. Medium rare implies that its cooked throughout, no red center, but also no medium well edges. Rare has a small red center and should also be pink throughout. Picture is medium rare steak, properly cooked.
