swiftlets (think tiny swallows) build their nest out of bird saliva, feathers and other debris, high up on the ceiling of caves that are often a few hundred feet high. Its harvested with long bamboo ladders and the process is very dangerous, obviously.

the nest is harvested when no longer in use, cleaned and processed and dried.
it is then cooked with sugar, dates, ginger etc in a dessert soup.

its like stringy crunchy jello that has texture.

so basically its dried bird snot....lol

it was (and still is) an expensive delicacy once only eaten by chinese emperors and such, but now people in thailand/phillippines are building entire houses just for the swiftlets to nest in, so its much easier to get them and its more steamlined now.
