Back then flying was a much smaller industry, so it cost much more money relatively and they'd offer fancier services because the customers were basically all flying in the equivalent of first class. This made flying seem like a special occasion for most people, so they'd dress up in fine clothes just for riding on the plane, and the entire image was curated around one of luxury. Planes back then were also significantly louder, slower, and more prone to feeling turbulence than modern planes, and the service was seen as a way to distract from all of that.

Flight service isn't so good today for the average flyer, but the tradeoff is that the flights are significantly cheaper, quieter, faster, and less prone to feeling turbulence (still happens but the average flight is way smoother than they used to be). You can experience all of the luxuries from the golden age today, you just have to pay for first class seating on a 3+ hour flight, which is still cheaper relative to an average ticket back then.

you compared the price of clarified butter to regular butter. a 16 oz jar of clarified butter is usually around $10. The grass fed organic stuff at my local walmart sells for maybe a couple dollars more.
