What would a man have to do in terms of diet to get buff and build muscle like pic related on the left?

Adam is starting to get buff. Pic related, you can clearly see his muscle growth is looking great for a father in his late 30's. The lack of soy in his diet is apparent.

I'm a mid-20's diabetic with a similar body shape as Adam. It's pretty hard for me to gain muscle/bulk without killing my A1C. Any foodies know of a good Diabetic diet/foods to bulk up to Adam's build? I'll never be able to bulk up like the chad on the right without losing my eyesight by the time I hit 30, so Adam is the most realistic bet.
