I make cassoulet a few times every Winter.
It's not exactly a quick and easy dish like OP is talking about but goddamn, it is worth every minute you put into it.
You can mix it up and use pretty much any meat you have handy.

Nothing wrong with eatin' beans.
I'd have made her rinse them first, though. I don't mind that liquid gunk in the can if I'm just dumping them in a stew or chili, but I wouldn't want to eat it cold.
