Pork absolutely has to be on the list, because of ham, both dry-cured and smoked, salami, pâté, rillettes, cretons, boudin, bacon, sausages, etc. You'd have to be insane not to put it in there. Beef is kind of a no-brainer too. And as much as I like lamb, trout, crab, etc. third one's gotta be chicken. Sometimes there's a good reason some things are popular.

The picture speaks for itself. Obviously France doesn't have a monopoly on dry cured sausages, but this one is a very good, simple, to the point example.
