there's nothing inherently less sanitary about a kebab spit than somebody with a rib roast at a buffet. You aren't supposed to keep/reheat the spits either. There are laws against it, and hopefully if you go to a good kebab shop they're constantly in rotation. That said, some places have gotten into deep shit because they refreeze the fucking things at the end of the night, and it's gotten people incredibly sick.

I have read that in Germany they have government mandated removal of the spits, and delivery of new ones, because of how ill people got.

I prefer my gravy with a more brown fond, so it doesn't come out so pale and has nuttier taste to it, but yeah that shit never looks good on camera.
