extremely fine, almost crunchy cartilage fibers, sitting in thick, umami rich seafood soup. The soup itself usually has crab and dried scallops as well. After serving, a dash of black vinegar and pepper cuts through the richness and lifts up the taste with sour and spicy notes. It is decidedly quite a luxurious dish that is normally reserved for very special occasions.

why would anyone even take the trouble to harvest sharks for their fins if its "just like any other cartilage"?

like wow instead of taking a boat hundreds of miles out into the ocean and hopefully getting a shark you can just kill some random chicken in some backyard for its cartilage..its the same, right?

its delicate and separates just slightly into exquisite fine strands, each strand superbly crunchy even after hours of boiling. Its finely crafted by nature and a joy in the mouth. I've eaten lots and lots of different foods and theres nothing quite like it. The vegan (fake) kind made of gelatin doesnt come close at all.
