Food service 'mason' glassware is not ready for canning and is thicker than canning jars.

The largest mason jars were always 1/2 gallon and they are still available. Pickles mostly but we used em for potatoes.

You used to be able to use Miracle Whip and Helmann's jars for canning, and the lids worked, they were metal with a paper insert. MW for large-mouth, Hellman's for small-mouth.
Then they began making the jars really thing glass, and now they're plastic of course.
Hellmann's lids still work well on small-mouth jars, MW lids now have a different threading so they don't work. I've found off-brand products that do.
That used to be done deliberately to co-incide with canning and because of the tooling. That is if people canned a lot of small mouth jars, they'd be more likely to buy Hellmann's mayo.

The world was a diffferent place. Not quite as you say but you're in the right general direction.

as you mention, opening and airing a rind of cheese often releases the ammonia, and tbqf some cheese is good with ammonia. I have no idea how ammonia-y hakarl is but I'd eat it, it's not carrion.

Don't eat bats, carrion, maggots, pangolins, dogs, none of that shit.

Raw fish properly prepared? Oh hell yeah.
Blue cheese? For sure.
Saurkraut? Yup.
Maggots? Fuck no.
