I use Sweet Baby Ray's as a base for making BBQ sauce cause I'm lazy.

usually I add;
paprika
cayenne
rosemary
GARLIC
onion or onion powder
red pepper flakes
a finely diced jalapeno or habenero(when I have them and when I'm certain my friend who's alergic won't be eating)
salt
little bit of lime juice
cut up pieces of half-cooked bacon

probably forgetting lots of stuff here, I mostly just grab spices by scent and add on a by taste basis; mix over low heat and wait for the stuff to come off the grill from the first pass.

a half quart of sauce for every rack of pork ribs(more or less).

aside from that specific thing though, I detest BBQ sauce.

part of it is the presence of water vapor generated by the charcoal(wood outputs more IIRC)

that and because FIRE, it just catches your attention on a satisfyingly primal level and you're attentive enough to not let it dry out(this is my opinion, so probably bunk).

I'm in Mathis TX, local resturants that aren't fast food are Vans Pirate Burger, and the taqueria Vallarta; I'd be suggesting Vans, but the new chef is bad and should feel bad.

taqueria Vallarta:
either the Steak and Eggs (morning eaters)
or the fiesta burrito (any other time of day)

both pretty good, both can be gotten for less than $7 both are reasonably filling.

I'd also like to put forth an entry for when I lived in Kingsville TX for Youngs Pizza.

their specialty was Sammiches
and I'd recommend the Texicali a couple of pounds of cheese-steak with extra jalapenos. barring that they also make a damn fine reuben sammich.

most of the stuff on the chalkboard is pretty good though...

little tex-mex place in town called taqueria vallarta there're, like, 2 resturaunts that aren't fast food and this one's pretty good.

the waitresses all know my name, what I like to eat at different times of day/week and my beverages of choice based on weather. food's free on my birthday(not a usual custom for this place) and I somehow always get larger than usual helpings.

it really does pay to over-tip. besides the place is CHEAP even with a $2 tip it costs less than $10 to get a really good feed...

if I'm in an adjacent town there's NY Joes(Italian food, good Stromboli) in Alice, and Sylvia's Pasteries(it's also a taco shop; damn fine Carne Guisada) in corpus...
