I don't really mind whether it is as topping or it being eaten alone. But yes bacon can be used for sooo many different recipes!
Here at home we sometimes eat it when we have breakfast, mix it with stew, wrap it around green beans or slavink. (a dutch meat dish where a mixture of half pork and half beef gets wrapped in bacon)

ignoring for the moment that your suggestion of beef in ramen makes me ill and furious, yes, you can thinly slice beef and cook it by dropping it into boiling water

you don't even need to simmer it, really

just slice the beef very thin and toss it in when you take everything off the heat.
