Onion caramelization is a semi-linear thing, you'll need to adjust the heat from medium to low during the process, and stir more frequently towards the end. It takes 45 minutes to one hour, and it's just onion, salt, and oil in a pot.

I've only had it once. It's pretty tasty, and you can really feel the wine from it. Not the alcohol, but the effects of the other wine's constituents.

I've done it in the past. Actually, the place I'm at right now heats centrally from a gas boiler, and it gets pretty cool in the winter. I just decided to forfeit the radiator this year and use the oven.

Stove is harder to control, for the heart, and in your case it could even be a bit dangerous because it's close to the wall, but if you keep a eye on it, it should be OK.

But yeah, the oven actually works fine as a radiator, I might actually get a fan or something to circulate the warm air.
