Even if the only things you'd eat in it are the carrot curry and rice? The beetroot has Nip smoked fish flakes (katsuobushi) in it which is the closest stuff I can find to maldives fish where I live, which is what would be used. It's like 9/10 similar.

I made three (or four, depending on your definition) side dishes, combined into one meal. I'll post photomuhgraphs when I can.
This couldn't really be an entry, but you can consider that way if you'd like, because I don't wanna enter with such a small number of people.

I cooked
bittergourd in egg curry
coconut cream sauteed beetroot with chilli and garlic
"quick carrot curry," a common side dish in my family so-named cuz it takes all of five minutes to whip up
and saltfish in curry gravy

Served with rice, which is the main, and the other dishes are all sides.
Again, I'll up the pics when I can, though I doubt any o' y'all're interested.

I'm not sure what constitutes a side dish for most people since lots of foods people consider 'sides' seem to be things I'd consider a main (like macaroni cheese, for example), but I'm thinking to make one dish I grew up eating alongside butcher's sausages. I would guess that this dish will, undoubtedly, rustle every autist's jimmies.

AFAIK, octopus should be cooked before eating, always. I know Koreans eat live and wriggling octopi, but I'm not aware of any other cultures which do that. It's always cooked. Always.
I boil water, add a whole, cleaned 'pus (to me, cleaning involves beating the fuck out of it like it owes me money then also brining it in solution that includes papain), then bring the water back to the boil.
Next, i turn off the heat and lid the pot and have the bastard sit there to think about what he's done. He knows what he did.
Finally, I take him out and rinse in cold water then drain and dry well before cutting him up and dressing him with lime juice, minced red chilli, mince onion, chopped coriander and prawn salt and let him marinate in the fridge for, like, a half hour or so.

Then someone said that people would sperg about muh authenticity. Then I acquiesced that it could be Mexican-inspired and that I didn't wanna just see food X shoehorned into a tortilla. Numbaz didn't take the bit about tortillas or not in when choosing this month's suggestion, though.
I was gonna make something I was planning to call tamalesaña. It was gonna be kinda similar to >>9556091's tamale pie, but in multiple layers, like a meat-and-corn-dough Vienetta. I'd been very unwell so wasn't able.
When I was feeling better, I saw Snowman's entry and had a cartoon villain moment ('curses! foiled again!'). Then I remembered someone was talking about Chamorro food, which is completely Mexican inspired. And I know Chamorro food. So I made titiyas yan kelaguen uhang but relabeled it as prawn ceviche and coconut tortillas, forgetting I'd originally suggested 'no tortillas lol.'

Just googled again and apigigi' (with the apostrophe, yes) looks similar, but that's made with cassava flour rather than masa harina. I did find Chamorro red tamales made with masa harina and achiote, stuffed with pulled chicken, though, while googling 'chamorro tamales.'
Those people are basically Aztec/Mayan/Polynesian/Asian hybrids and so is their cuisine. You wouldn't expect it.

I've had titiyas, both the sweet and plain flour types but never had the corn ones. Both the ones I had tasted really rather nice. Had the plain one with Guamish beef ceviche (pretty much the same thing as Mexican ceviche... just with lean beef mince instead of chopped fish plus the addition of shredded coconut).

What's the name of those sweet tamales Chamorros make with masa harina and coconut milk stuffed with banana and steamed in banana leaf (rather than corn husk)? I tried googling it a while back but couldn't find it.
