Yeah. Their chili is a meat sauce with peppers and spices. Old pioneer food. You'd get dried powdered beef and chilis and spices in a food-brick -- sort of Old West pemmican-themed MRE's -- and rehydrate it when you wanted to eat something, with maybe some corn bread on the side.

Everybody else seems to go with the original Mesoamerican beans-plus-spices-plus meat thing. It's five hundred years of history in a bowl. But what the Texans do is damn good.

Nama-nare zushi, which *is* mildly fermented, is a medieval thing. Modern sushi is maybe a couple hundred years old, and has a dash of rice vinegar to recall the taste of the partially fermented product.
