I used to be a dairy farmer with a small herd (10 to 15 milkers, 10 to 15 off rotation, two or three calves and 10 ish steer at any point in time) so I had infinite access to fresh milk. Didn't bother with pasteurization and never had any issues with getting sick.

Now I live in the city and just buy store brand.

Crumb doesn't look bad to me at all, although the overall volume looks a little low. Make sure you're getting enough tension into the loaf before baking, and not underproofing/wildly overproofing it.

Unless you're making a fuckton of pastries I'm not sure a stand mixer is worth it, though Kitchen Aids have a fuckton of attachments and I've been known to spend way too much money on inane shit, so I wouldn't look down my nose.

Btw, 60 dollar Aldi mixer is shit. Can't even whip a meringue.

Saturday was crazy. Other baker called in sick at the last minute so I ended up pulling a 14 hour shift to get all the bread made.

All in all, I made...

256 loaves of sourdough
199 dinner rolls
135 sandwich size ciabatta loaves
12 full size ciabatta loaves
