Generally how it's stored, how much it's exposed to light, etc.

Go to a local market or a bar and find a bottle that's in the dark at the back of the shelf, and snag that.

It can make a huge difference, my favorite Bourbon for regular drinking is Bulleit Bourbon, which can be watery and bland if I get it at the wrong place.

Sapphire has a fucking distribution problem.

If you get it from a good distributor that doesn't fuck people, keeps a smaller stock and rotates it frequently then it's one of the best Gins out there.

If you don't get it from one of these sources, it tastes like flavorless spicy horseshit, but when it's fresh it's absolutely fantastic and head and shoulders above many gins.
