Greek Peasant Salad
1lb Cucumbers (4 “Kirby” cucumbers)
2tbsp fresh lemon juice
1tbsp olive oil
¼ teaspoon salt
1/8 teaspoon ground black pepper
2 pounds ripe red and/or yellow tomatoes (about 6 med size), cut into 1-inch pieces
½ cup loosely packed fresh mint leaves, chopped
1/3 cup kalamata olives, pitted nd coarsely chopped
¼ cup loosely packed fresh dill, chopped
2 ounces feta cheese (crumbled)
With vegetable peeler, remove 3 or 4 evenly spaced lengthwise strips of peel from each cucumber. Cut each cucumber lengthwise into quarters, then crosswise into ½ inch pieces.
In large bowl, with wire whisk or fork, mix lemon juice, oil, salt, and pepper until blended. Add cucumbers, tomatoes, mint, olives and dill, and toss until evenly mixed and coated with dressing. Top with feta.

If you need to make substitutions (because I don't know where you are in the world), let me know and I'll help you work it out. This is a really easy salad. If you'd like something a little more substantial, I've got more that we like.

What kind of fresh vegetables (supermarket shouldn't count since they don't have to be in season to be sold there) do you have access to?

My wife is vegetarian, so I have a pretty good number of vegetarian recipes in my head.

This picture looks exactly like me at age 10. I had to look at it really hard to make sure it wasn't me somehow.

Yes. I was not friends with any other fat kids, and I haven't had my own yet.
>How did you/they get that way?
Binge eating disorder. Got worse as I got older because of depression.
>How did you fix the issue?
Short-term intensive therapy, finding value in myself and my doctor telling me I wouldn't live past 30.

Highest weight was somewhere between 520-530. Lowest adult weight has been 175 (really ill), and I look relatively normal around 200 (my current weight). Pic related.

Tomorrow's our 1 year wedding anniversary, and we're going to be busy all day with my great grandma (we're celebrating her 96th birthday tomorrow). We're going to the farmer's market in the morning. What should I cook for our 1 year anniversary breakfast? Trolls appreciated.

I recently had some unpasteurized goat milk... it was pretty awesome. Tasted a little like soy, and a lot like cream/buttery. I'd recommend it if you can find a legit source!

Mostly I taught about nutrition. She wanted to experiment more than learn to cook. I let her do most of the cooking, trying to teach her knife technique, and used recipes that I have learned along the way.

Hey, /ck/. Just did my first cooking demonstration. I made ratatouille with zucchini cakes (fritters) with a high protein cottage cheese/parmesan sauce. High protein, high fiber, good carbs for energy. Just wanted to say thank you again for the confidence.

I told the girl just to advertise for me and that could be payment enough, and she said she definitely would advertise on all her social media accounts, but she insisted I take $20, too.

The vegetables don't look done in this picture, but they were.
