Thanks! It was really good. I love cooking with crab because it's always so fresh. Those buggers were living an hour or two before I ate them. I was going to do a crab ceviche but decided to do this instead.

I garnished with a little bit extra mint and served it with some corn and a beet salad.
I thought it was an appropriate Summer meal.
Would have paired nicely with some white wine. I highly recommend this, really interesting mix of flavours, never thought I'd find something with jalapeno and mint that would go well together.

Here is what I do to clean them,
flip the crab on it's back and kind of stab it with a rock - this kills the crab instantly
after that I grab it by all the legs (claw included) and hit the shell on the side of a log or rock to rip off the shell and most of the innards.
Then it in break in half, and rinse in the ocean and pick off the lungs/gills.
I rinse them off when I get home and make sure there's no nasties sticking on to them still.
