I think the best person who would know what to get her would be you. Hopefully she'll like whatever you give her, as long as you spent real time thinking about her.
Keep your ears open about her wants, like when she messages you about something cute or whatever, or when she hints at something she wants to buy. At the very least, it'll give you an idea of what she likes.

If she makes her own cosplays maybe you could get her materials, or gift cards for places she buys materials from? It's not super original but it's useful at least (if you get the right places hah)

I think the sweetest gift would be buying her Asuna's SAO sword prop as well as getting yourself Kirito's main sword, with the promise that you'll cosplay Kirito to match her. You could turn cosplay crafting it into a super cute couples activity as she walks you through the process of making your costume.
This does put some burden on her, however, so don't go with this if she hasn't expressed some desire to have you couples cosplay with her or if you aren't sincerely interested in learning.

If that is too indepth, Art Books are always an A+++ gift. I don't know if SAO has any though or if you'd shell out for them.
Another pricy option is figmas/figures and/or statues.

Seconding this, if she's into making her own costumes, check out that thread for some sewing related gifts (or if she's into making armor, a big fat package of worbla). A lot of girls are really into couples cosplay, so maybe offer to cosplay as a pair when you give it to her as the cherry on the cake.

might be dumb, but have you thought about like an ikea gift card? I never had a sewing space of my own before upper division college so when I moved out my BF got me a nice desk for my machines and and a peg set for all my thread.
