How do consumers even choose their own energy providers as and when they like? It involves contractors and workmen coming down to your place, reworking your live wires etc. literally do not understand how this would even work. Can someone help?

The token is only beneficial if you are using the marketplace, this is stated in the whitepaper. For investors the token is pointless to hold as there are no dividends, no masternodes, no staking so the token only has partnerships going for it.
