Yes they'd generally convert the crypto directly to fiat, but in some cases they'd hedge by holding a fraction of the crypto in their own wallet.

My buddy did that, started a business like 6 years ago and would accept BTC as form of payment. Like I said he'd convert to fiat usually but he'd also keep like 1/100th of the BTC himself from each transaction (don't know if it was exactly a hundredth, just a small fraction, you get the idea) and just hold it. Well he's now worth about ~$6-7 million with the combined success of his multiple businesses, and incorporating crypto into his businesses and holding, and he started with practically nothing in the beginning.

Point is, it's not just guys who decided to save up their McDonalds wages back in 2011 and buy $5000 worth of BTC and sit on it until 2017, there's a variety of ways people accumulated and not all of them were brilliant ivy league graduates who knew the tech inside out.
