The more partners / merchants / other coins / DEX / etc. who will use the OmiseGO network - the more valuable single OMG token will be because there will be bigger demand for approvals inside the network. That means the token value will rise because each token will earn more frequent staking rewards. In theory, OMG token value can rise indefinitely. This is what most people forget to see - they see only the initial value of the token with the set number of merchants and do not add into equation the growth of the OmiseGO network, which affects the value of the OMG token a lot. This is also why the single OMG token will be valued insane high even if the network will produce relatively small staking fees - because the number of transactions will be humongously Plasma big and the rewards from a single OMG token will be crazy.

And the fact that the tokens are locked away in a smart contract while staking. When staking turns profitable and easy, most people would lock them away. If people choose more OMG as the reward for validation, with all the fomo, it will naturally create a high demand.

You lock your OMG in a contract for a given length of time, during this time you must validate transactions with your hardware. At the end you get your tokens back with interest. This is just the gist of it, they have not revealed specific amounts for anything yet.
