Can someone explain to me what exactly chainlink is trying to do? Dumb it down for me.. i was trying to wrap my head around what sergey and ari juels talk about.. Would appreciate a brief explanation on what they are trying to accomplish.. maybe Assblaster can explain this a bit further??

It allows people to set up nodes which relay real world data to the blockchain in exchange for links from people who use that data. This can already be done through companies that act as what are called oracles, however, when data comes from only 1 source you have to trust that source to be correct. Chainlink essentially makes it so you get that info from many different sources making it much more likely to be trustworthy data meaning your money isn't lost to some company trying to screw you over or to incorrect data.
