Useful degrees like STEM/Law/Medicine and accounting have no problem with employment.

Recent pinkwojaks from developers are coming from people who got used to 6figs after graduating or after a bootcamp. If you talk to CS students you will see that for 80% it's FAANG or nothing, even though there are a lot of jobs outside of FAANG where the pay is more in line with other STEM professions.

In most professions you have to work in the field and gain experience and prove your skills before you can call yourself a senior.

This. I tried for years trying to get a high paying job without a degree. Theres a hard ceiling at $25/hr w/o one. Even a degree mill is better than nothing. A company could be liable for hiring someone w/o a degree over someone with one.
I suppose alternatively you could commit to 4 years in a field for ~$20/hr and try to move up like that, but at that point its still smarter to invest in getting a degree.
